Default What is your favourite quote?

As many of us here I started to reread (again).
And now, that I know the end I look at it different, and I have my eyes open for some other things.
So I start this new thread, asking you about your favorite quote.

So, in the Philosophers stone i found a wonderfull sentence, I want to share with you now.

But from that moment on, Hermione Granger became their friend. There are some things you can't share without ending up liking each other, and knocking out a twelve-foot mountain troll is one of them.

(Philosophers Stone, Chapter "Halloween", last paragraph)

From SS, I love (one of the few moments) when Ron says, "Are you a witch or not!?" to Hermione while they are stuck in the Devil's Snare. Er... that's probably not word for word as I don't have the book at the moment, but I'm sure many of you know what I'm referring to.
Severus' introductory lecture, the one about being able to "ensnare the senses", "bottle fame", "brew glory", and "stopper death". It was so utterly, completely Severus. Intimidating and poetic.
"Alas, ear wax." Dumbledore. His "I'd like to say a few words..." which ended up being something oddment. Four completely random words, at least.
I can't think of anything off the top of my head from 2-6, although there are surely very many.
From DH, Hermione, about to drink Polyjuice: "Ooh, you look much tastier than Crabbe and Goyle, Harry,". (as it turned bright gold as opposed to puke colored.)
My signature, of course, which may just be my favortie quote. I'll have to reread the series before deciding.

Ah, wait, I've thought of another Ron one: In OotP, I believe, in the same time period as Hermione's "emotional range of a teaspoon" quote (great one as well), Ron makes a guidebook comment, or something similar, to help him and Harry figure out girls.

Foreshadowing, in hindsight, considering Harry's birthday present.
