I believe that Neville Longbottom will be the one to take over Herbology at Hogwarts. It only makes sense from his character development...from year to year, Neville was never good at anything (and absolutely awful at potions) except for Herbology.

He excels in this subject and I believe he knows enough about magical plants to become a teacher at Hogwarts.
